The bergamot is the fruit of the bergamot tree (Citrus bergamia) or Kitron the bergamot of the genus Citrus belonging to the citrus family. As it is sensitive to cold, bergamot is cultivated mainly in warm climates, such as in Calabria, Cλεte d'Ivoire and Greece in Corinth, Argolis, Corfu, Kefalonia, Andros and Crete. The inside of the bergamot fruit is not eaten raw, but it becomes sweet of the spoon and jam. The aroma of bergamot is distinctive and intense and is used in a huge variety of teas, most famously Earl Gray tea, as well as in delicacies.
